1 1/4 cup flour
1 1/2 tsp baking powder
1 1/2 cup sugar
1 # rhubarb, cut in 1/2" slices (3 cups)
1/3 cup vegetable oil
1 egg
1 tsp vanilla
1/2 cup milk

Directions:
Directions:
Combine 1 cup sugar and rhubarb in a sauce pan. Cook 5-8 minutes, stirring constantly until rhubarb softens. Scrape into a 8 x 8 x 2" greased pan. In a medium bowl, add 1/2 cup sugar, oil, eggs and vanilla. Mix well. Add flour, baking powder, alternately with milk until well blended. Spoon batter into mounds over the rhubarb, spread as evenly as possible. Bake at 350º for 35 minutes. Cool cake in pan for 5 minutes. Losen edges of cake from pan with a knife and flip cake onto a plate. Spoon extra syrup on top. Serve with ice cream or whipped topping.
