Israeli or "Pearl" Couscous (cooked) 2 oz
Arugala 2 oz chopped
Roma Tomatoes 2 oz diced
Smoked Salmon 1.5 oz
Asiago Cheese .5 oz
Black Currants .5 oz
Super Sweet Dried Corn 1 oz

Buttermilk Dressing
Pesto Buttermilk .5 cup
Shallot 1 rough chop
Aioli 1 cup
Buttermilk 1 cup
Course black pepper .5 tsp.
Half Lemon juice

Directions:
Directions:
Place all salad ingredients in bowl. Prepare dressing: add first three ingredients to food processor and blend thoroughly. With motor running, pour in buttermilk. Add remaining ingredients to combine.

This is dad's and my favorite salad. When Florence Tauber, Nana's dear friend and a gourmet cook, came to town, we took her for this salad and she brazenly asked for the recipe! Lo and behold, they gave it to her. Lesson here - it never hurts to ask.
