2 to 3 lb. chicken, cut in pieces; 2 T oil; 1 t. salt; 1 lg. can Low sodium chicken broth or 4 cups of water; 3 or 4 slices of ginger, 3 or 4 cloves of fresh garlic- chopped; 1 bundle of saifun (bean thread); 1 or 2 stalks of green onion; 1 T. soy sauce

Soak long rice in warm water, and cut in 3 to 4 inch pieces after it's softened.
Fry garlic and ginger in oil until slightly brown. Take out garlic and ginger, add chicken and fry til lightly browned, seasoning with a little salt as you fry. Add broth (or you can use water, but broth tastes better) and cook until chicken is tender, about 2 hours. Put garlic and ginger back in if you like...
Add drained long rice, soy, dash of pepper, and chopped green onion. Cook 10 minutes more.
