5 slices of bacon
2-3 pounds shredded & cored cabbage
1 large onion chopped
1/2 cup water
3 Tablespoons butter
1/2 cup cider vinegar
1/4 cup brown sugar packed
salt & pepper to taste
2 Apples chopped (granny smith my fav)

Fry the bacon until fat is rendered and bacon is crisp. Remove bacon and set aside. Saute onions and cabbage (red preferred but green OK) until tender. Add in all other ingredients and simmer covered for about 1 hour. All items should be cooked down. Taste, should be savory and tart, sweet and sour. Adjust seasonings to your liking. If there is too much liquid, simmer on low without cover until thick.

I like to serve the crumbled bacon bits on it when I eat it. This is optional. Apples can be omitted and use more cabbage. Serves 8

This is an item from my mom's side of the family and traditionally served on Thanksgiving day. We love this and hate those darn yams. Go figure!
