1 cup butter
2 cups sugar
6 eggs
1 cup sour cream
2 cups peeled, chopped apples (Cortland or Macintosh)
2 tsp. vanilla
1/4 tsp. almond extract
3 cups all-purpose flour
2 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. salt

Preheat oven to 350º. Have all ingredients at room temp. Grease and flour a bundt pan. Peel and chop apples, mix with sour cream in a small bowl and set aside. Sift together flour, baking soda, salt and cinnamon. Set aside. In a large bowl, cream butter and sugar til well-blended, light and fluffy. Add vanilla, almond extract and eggs, two at a time. Blend well after each egg is added. Starting and ending with dry ingredients, gently blend in flour mixture and sour cream/apples, one-third at a time. Blend on lowest speed to just combine. Pour into the pan. Place on middle rack in oven and bake about 75-80 minutes
