Cinnamon filling
1/4 cup granulated sugar 2 Tbsp dark brown sugar 1 Tbsp cinnamon 2 Tsp instant coffee powder 4 Tbsp melted butter 1/2 cup raisins
Coffee glaze
1 Cup confectioners sugar 2 Tsp instant coffee powder 1/4 tsp vanilla 1 Tbsp milk, or more if needed

Mix 1 1/2 cups of the flour and yeast in large bowl with the other ingredients except milk and butter. Warm milk and butter to 115 degrees. Add to yeast mix and then add egg after mixed. Blend with food mixer and then make soft dough. Let rise until double, about 1 to 1 1/2 hours.
Cinnamon filling. Combine sugars cinnamon and coffee.
Roll dough out on a floured board to a rectangle about 12x20 inches. Brush with the melted butter and sprinkle with the cinnamon filling, then with raisins. Carefully roll up tightly like a jelly roll, starting with the 12 inch side. With a sharp knife cut into 6 rolls (be careful not to squash the rolls while cutting. Place rolls, cut side up in greased cups of pan. Brush with any remaining melted butter. Cover and let rise in warm place about 20 minutes. Heat oven to 350 degrees. Bake rolls until brown, about 25 to 30 minutes. Cool in pan 10 minutes. Remove and drizzle with the coffee glaze.
Coffee glaze; Mix coffee powder, vanilla and 2 Tbsp milk together until coffee dissolves. Add sugar mixing well. Add enough additional milk to make a medium glaze. |
