6 medium potatoes, boiled and sliced thin
1 cup onions, sliced thin
3 tbsp. parsley,chopped fine
1 clove garlic (optional)
6 tbsp olive oil
2 tbsp. wine vinegar
Salt and pepper to taste

Directions:
Directions:
Peel and boil potatoes until almost done. When cold, slice thinly. Add onions, parsley and garlic. Mix the oil and vinegar and pour over the salad. Toss until thoroughly mixed. The flavor improves if the salad is allowed to stand for 3-4 hours. This salad can also be made with small unpeeled red skin potatoes (you will need more than six of these!). Serve chilled or at room temperature.
