Ingredients: 2 tablespoons olive oil 1 pound swiss chard, stems removed & coarsely chopped (about 8 cups) 2 tablespoons water salt & freshly ground pepper (for taste) 2 tablespoons balsamic vinegar 1/2 of an 8-ounce baguette, sliced diagonally into 8 pieces (about 1/2 inch thick each) & toasted 1 1/2 ounces garlic-and-herb feta cheese or plain feta cheese, crumbled (1/3 cup)

Directions:In a very large skillet or wok, heat olive oil over medium-high heat; stir-fry Swiss chard for 2 minutes. Add water & cook 2 minutes more or until chard is wilted & tender. Add salt & pepper to taste. Remove from heat. Stir in vinegar. To serve, divide chard among baguette slices. Top with feta cheese. Serve immediately. |

Notes: Swiss chard is a member of the greens family. Swiss chard is related to the beet. It's earthy & slightly sweet & is also packed w/nutrients. Though the leafy part is always green, the wide, flat stalk comes in a variety of hues--from white to bright yellow, orange & red. Swiss chard is easy to cook. It can be baked into a pie or sauteed with olive oil & spices.
