Ingredients: CAKE: 3 eggs 1 1/2 c. pitted dates, sliced thin 1/ 1/2 c. water 1 tsp. soda 3/4 c. butter 1 1/2 c. sugar 2 1/4 c. cake flour 1 1/2 tsp. baking powder 3/4 tsp. cinnamon 1 tsp. salt 1 tsp. vanilla CHOCOLATE ICING: 1/2 c. water 1 square unsweetened chocolate 1/2 c. sugar 1 1/2 T. corn starch 1/2 tsp. vanilla 1 T. butter

Directions:Bring water to boil. Stir in baking soda and pour over dates. Let stand until cool. Cream the butter until light and fluffy. Add sugar and mix thoroughly. Add one egg at a time, mixing. Stir baking powder, cinnamon and salt into flour. Slowly add flour mixture to egg-butter mixture alternately with dates. Stir in vanilla. Pour into prepared tube pan and bake 30-40 minutes at 350 degrees. While cake is baking, prepare icing. Heat the water and chocolate in saucepan until chocolate melts. Mix together sugar and corn starch. Add sugar mixture to chocolate mixture and continue to cook and stir until thick. Remove from heat and add butter and vanilla. Beat and frost cooled cake. |
