1 cooking apple, Jonathan or McIntosh work well
2 tbsp. brown sugar
2 tsp. butter, softened
dash of cinnamon

Directions:
Directions:
1. Peela a rim of apple skin from top of apple to allow steam to escape while cooking.
2. Core apple by using a paring knife and cutting against a cutting board. With the knife go straight down through the apple core. Pull the knife out, then turn the apple and do it again. Continue until you have gone around the apple. PUSH the core out.
3. In a custard cup compine the brown sugar and butter with a fork.
4. Put apple in another custard cup. Fill the cavity with brown sugar and butter.
5. Sprinkle cinnamon over apple.
6. Microwave 2 minutes or until apple is tender.
7. Let apple stand 5 minutes to complete cooking.
8. Eat and enjoy!
9. OPTIONAL: Serve with whipped cream, whipped topping, or ice cream

This is one the recipes used in a lab on fruit preparation. Using apples are inexpensive and readily available. I often look to have them donated. Other ktichens make applesauce, apple crisp, apple fritters, and raw apples with dip. Students learn to use the microwave, stop top cooking, deep fry, oven, and prevention of the browning of apples.
