8 bacon strips
1 1/2 pounds beef flank steak
4 cups fresh baby spinach
1 jar roasted sweet red peppers, drained
1 3 oz. package cream cheese, softened
1/4 cup milk
1 T. butter
1/4 tsp. pepper
1/2 cup crumbled blue cheese

Cook bacon strips and drain on paper towel lined plate.

Meanwhile, cut steak horizontally from the long side to within 1/2 inch of opposite side. Open meat so it lies flat; cover with plastic wrap. Flatten to 1/4 inch thickness.

Remove plastic. Place spinach over steak to within 1 inch of edges; top with red peppers. With the gain of the meat going from left to right, roll up jelly-roll style. Wrap bacon strips around beef and secure with toothpicks. Slice beef across the grain between bacon into eight slices.

Grill, covered, over medium heat for 5-7 minutes on each side or until meat reaches desired doneness. Discard toothpicks.

In a small saucepan, combine the cream cheese, milk, butter, and pepper. Cook and stir over low heat until just smooth. Stir in blue cheese and serve with pinwheels.

This is one of those really good recipes that is really pretty too. It is great for guests if you are looking for a little something extra but but something that isn't too difficult to make.
