1 chicken
1 tbsp. fresh rosemary
2 tsp. chopped thyme
1/2 tsp. salt
1/4 tsp. black pepper
4 garlic cloves
Cooking spray
1/2 cup lemon curd (see sauces for recipe)
3 large lemons, halved

Directions:
Directions:
Preheat oven to 450º. Loosen skin and rub mixture under loosened skin and then place breast side up in broiler pan coated with spray. Brush chicken with lemon curd and arrange lemons around chicken. Bake 30 minutes. Reduce temperature to 350º and bake 1 hour.
Nutrition: Calories- 269; fat - 10 grams; fiber - 2 grams.

I love chicken. It seems like recipes that appeal to me are almost always poultry or seafood. That isn't such a popular preference living in the heart of the Sand Hills and cattle ranching country.
