3 quarts water
1 tbsp. water
1 tbsp. parsley
1 tbsp. thyme
1 tbsp. oregano
3 celery stalks
2 carrots
3 skinless chicken breasts
1 large onion quartered
2 bay leaves

Directions:
Directions:
Cook chicken in water until done. Strain, cool chicken and shred. Reserve broth.
Puree: 1/2 tbsp. curry powder and 28 oz. undrained tomatoes.
Sautee: 1 tbsp. olive oil; 3 cups onion chopped; 1 bell pepper and 2 garlic cloves. Mix tomato puree with above ingredients, heat and reduce for 45 minutes. Add chicken and currents and serve over rice, topping with almonds.
