12 oz. red potatoes, cubed
1 tbsp. unsalted butter
1 cup pear onions
1/4 cup chicken broth
1/2 cup heavy cream
pinch of nutmeg
1/2 cup frozen peas, thawed
1 tbsp. chopped fresh chives
lemon juice to taste

Directions:
Directions:
Boil potatoes in salted water until tender. Drain. Melt butter in a large non-stick skillet. Add onions and saute about 2 minutes. Add broth until syrupy 3-5 minutes. Add cream and seasonings, simmer until thickened. Add all remaining ingredients.
