1 lb. asparagus
1 tbsp. olive oil
2 tsp. salt
1/2 tsp. fresh ground black pepper
1/2 cup plus 2 tbsp. balsamic vinegar
1/2 tsp. brown sugar
1 pound penne
1/4 cup butter
1/2 cup grated Parmesan Cheese

Heat oven to 400º. Snap the tough ends off of the asparagus and discard them. Cut the spears into 1 inch pieces. Put the asparagus on a baking sheet and toss with the oil and 1/4 tsp. each of the salt and pepper. Roast asparagus until tender, about 10 minutes. Place vinegar in a saucepan. Simmer until 3 tablsp. remain then stir in brown sugar, remaining pepper and remove from heat. Cook penne, toss with ingredients and serve with additional parmesan.
