2 10 oz. fresh red snapper fillets (I use orange roughy)
2 tsp. Creole or Cajun seasoning
Long Grain Rice
2 tbsp. butter

Directions:
Directions:
1. Thaw fish and pat dry. Sprinkle with Cajun seasoning and then cook in medium hot skillet until fish flakes with fork..about 4 minutes.

2. Meanwhile, cook 3 cups of rice according to package directions. Add red beans and 1/2 of the seasoning.

3. Serve fish with rice and beans and drizzle with melted butter over the top.

Nutrition: 447 calories; 11 grams of fat; 6 grams of fiber; Weight Watchers Points = 8 points
