Balsamic Glazed Chicken Sandwiches with Red Onions and Cream Cheese Recipe

Ingredients: 3/4 cup balsamic vinegar 1/2 cup dry red wine 2 tsp. brown sugar 1 tsp. soy sauce 2 skinless, boneless chicken breast halves 1/2 tsp. salt 1/4 tsp. pepper Cooking spray 1 tbsp. olive oil 1 1/2 cup red onions, sliced 1 3 oz. package cream cheese 4 Kaiser rolls 1 cup spinach

Directions:1. Combine the first 4 ingredients in a small saucepan over medium heat. Bring mixture to a boil, stirring until sugar dissolves. Cook until reduced to 1/3 cup. Remove from heat and cool slightly.
2. Heat large nonstick skillet over medium heat. Sprinkle chicken with salt an pepper. Coat pan with cooking spray and add chicken to pan, cooking about 4 minutes on each side or until done. Remove from pan, slice thinly, and keep warm.
3. Add oil to pan, add onion and cook 5 minutes or until onions carmelized. Remove from heat and add to vinegar mixture.
4. Spread about 1 1/2 tablespoon cream cheese on toasted buns. Divide chicken between the rolls, and drizzle each serving with about 2 tablespoon of the balsamic vinegar mixture and spinach. Serve immediately. |
