8 corn tortillas
8 eggs
1 16 oz. can chopped tomatoes
3 cloves garlic
½ cup red onion, chopped
1 tsp cumin
1 tsp. chiles (spicy Serrano or mild Poblano)
4 tbsp finely grated cheese or quest fresco
½ cup cilantro
salt and pepper to taste

Blend tomatoes, garlic, onions and chile in a saucepan. Add cumin, salt, pepper and half the cilantro. Cook down into a sauce and set aside. Lightly fry tortillas in oil (only for a bout 30 seconds on each side) and set on plate overlapping each other slightly. Fry two eggs and place on top of the tortillas. Spoon tomato sauce over the top and top with cheese. Garnish with whole fresh cilantro leaves.

Huevos Rancheros is one of my all-time favorite breakfasts. You can add refried beans to the tortilla and top with the egg, for a heartier version. Some people like to add Jalapenos or Serrano chiles on top for a little extra heat.

This is also a great brunch dish, served with a spicy Bloody Mary.
