8-10 Tilapia filets (trout or catfish can also be used)
2 cups fine grained corn meal or packaged “fish fry” mix
1 tsp garlic powder
1 tbsp salt
1 tsp pepper
1 medium sized bowl of milk

Directions:
Directions:
Place fish filets in milk and let soak for about five minutes. Season corn meal with salt, pepper and garlic powder. Coat the fish filets in the corn meal mixture and fry in deep fry pan or stockpot until crispy and golden brown. Garnish with wedges of fresh lemon.

Homemade French Fries

Cut 4-5 large Idaho potatoes into long ˝-inch strips. Shock the potato strips in an ice bath for about 10 minutes. Remove and pat dry. Place in freezer until firm and very cold. Remove and pat dry with towel again, to remove any moisture. Season potatoes with salt, pepper and garlic powder. Fry in small batches in hot cooking oil until golden brown. Drain on paper towels and serve immediately to avoid getting soggy.

My father and brothers enjoyed fishing in their spare time and were nearly always successful at bringing home an ice chest full of fresh fish. There are several large lakes and rivers in the Texas hill country, so the catch of the day was often trout or catfish. (I have found Tilapia to be terrific fish of choice, as well.) A “fish fry” was always another good reason to get together with family and friends. Deep-fried fish is well complemented with either homemade French fries or East Texas hushpuppies.
