1/4 c. chopped green pepper
1/4 c. chopped onion
3 egg whites
1 sm red potato, cooked and sliced
2 tbsp reduced-fat shredded cheddar cheese
1 strip reduced-fat turkey bacon, cooked and crumbled

1. Lightly spray a nonstick 8" frying pan with cooking spray and saute peppers and onions over medium heat until soft. Put the veggies into a separate bowl.
2. Whisk egg whites and pour into the heated pan. Once the eggs have set, in approx. 40 seconds, start lifting the edges of the omelette and let the uncooked egg on top run underneath.
3. Before the top is completely set, lay the sliced potatoes across one half of the omelette, top with the reserved pepper and onion mixture, and sprinkle with cheese and crumbled bacon. Flip the untopped side of the omelette on top of the potatoes. Gently slide omelette from pan onto plate to serve.
