2 green or red peppers
6-8 eggs
Olive Oil
1 small sliced onion
salt and pepper

Directions:
Directions:
Prepare as frittata. First, cut up potatoes, peppers, and onions and fry them in oil in skillet. Add salt and pepper to taste. Next, beat eggs well. Add to mixture in fry pan. Cover and cook until eggs puff up. Half way through cooking, put plate over fry pan and flip the omelet to cook on the other side.

This was a Friday night favorite in my Mom's kitchen on Ronald's Lane, New Rochelle. In those days, we couldn't eat meat on Friday, so we improvised with all kinds of Italian recipes from pastas to frittatas and fish meals. I really liked this one. It was an entire meal all in one. Great with Italian bread and a salad on the side.
