1 cup sifted flour
1-1/2 tsp baking powder
1/2 tsp salt
2 tsp sugar
2 T shortening
1 egg
1/4 cup milk (about)
2 cups sliced fresh peaches
1/2 cup sugar
1 T lemon juice
2 tsp grated lemon rind
1 T butter

Directions:
Directions:
Preheat oven to 350ºF.
Sift together flour, baking powder, salt and sugar. Cut or rub in shortening. Beat egg and add milk. Add all to flour mixture, stir until flour is moistened. Into 4 individual baking dishes place sliced peaches, sprinkle with sugar, lemon zest and lemon juice. Dot with butter. Drop batter by tsp on peaches arranging in circle fashion. Bake about 30 minutes. Serve plain, with milk or with ice cream.
