4 chicken breasts
½ c. flour
salt, pepper, basil, ½ tspn. each
4 slices bacon (pork or turkey), chopped
½ c. chopped onion
1 c. fresh mushrooms, sliced
4 carrots, chopped
1 clove garlic, minced
1 c. chicken broth
1 c. dry white wine
½ tspn. Herbs of Provence or Bouquet Garni
olive oil

Directions:
Directions:
Fry bacon in skillet until crisp, remove and drain on paper towel. Saute garlic, onion, and carrots in remaining fat or discard and use olive oil. Add mushrooms when others are almost cooked. Remove skillet from heat while preparing chicken. Add salt, pepper, and herbs to flour and mix. Coat chicken breasts in flour mixture. Push vegetables to edges of skillet and add 1-2 Tblspns. of olive oil to center. Brown chicken breasts on one side and turn over to brown other side (may need more oil). Add bacon back to mixture. Add wine and chicken broth. Cover and simmer about 30 mins. May be served with rice and green vegetable such as broccoli or green beans.

Herbs of Provence are available as a mixture.
Bouquet Garni = thyme, bay leaf, parsley in cheesecloth pouch.
