One head of Escarole (it is the green vegetable with the white and yellow center. It is usually spread open, and could be used raw or cooked.)

Several cloves of garlic.

Olive Oil.

Clean escarole and cut into pieces. Be sure it cut off the hard core.

Wash and rinse, then boil in 1/2 pot of boiling water. Add olive oil and garlic and simmer with cover partially open. We usually stick a wooden spoon between the pot and the cover.

Retain some of the water when serving so that you could dip Italian bread into it. Serve with a meat dish.

Maybe it isn't appropriate to discuss this here, but if anyone suffers from constipation, this is the vegetable to prepare. It is very healthful and we usually dip our bread into the water, since all the vitamins end up there.
