9 lbs. ground beef
9 cups finely chopped onions
1 qt. milk or cream
9 eggs
3 Tspns. salt
1 Tblspn. white pepper
1 tspn. nutmeg
Madeira wine
Pepper to taste

Directions:
Directions:
Combine all ingredients except wine. Roll into marble size balls and saute in small batches in heavy skillet. To make sauce, skim off fat in skillet or remove with 6 ice cubes. Scrape pan and pour juice into small saucepan, season with Madeira, heat and serve over meatballs in chafing dish. Freezes well.
