Ingredients: 3 cups sweet potatoes, mashed 1 stick butter, melted 3 eggs, beaten 1 ½ cups sugar ½ cup evaporated milk 1 teaspoon vanilla Pinch of salt Topping

Directions: |
Directions:Mix all ingredients. Pour into buttered casserole dish. Sprinkle with topping and bake at 350 degrees for 1 hour or until top is crunchy.
Topping:
1 stick of butter or margarine 1 cup chopped pecans or walnuts ¾ to 1 cup brown sugar
Melt butter slightly, add brown sugar and mix in nuts.
VARIATION: Scoop potato mixture with ice cream scoop and top a slice of pineapple. Heat until warm throughout. Then add a large marshmallow on the top and put back into the broiler for a few seconds. Better watch it closely or there will be a fire! This is Georgette Therault's recipe.
VARIATION: Glazed sweet potatoes. Use either fresh or canned yams. Melt butter in frying pan and add brown sugar until slightly bubbly. Toss in potato chunks or wedges and coat for several minutes on both sides. Serve in casserole dish.
VARIATION: Just cook the sweet potatoes in their jackets and serve with butter, honey and brown sugar. |

Notes: This is a wonderful addition for Thanksgiving dinner. I have been making sweet potatoes for as long as I have been preparing Thanksgiving dinner. It wouldn't be Thanksgiving without them!
