Pastry for 9-inch Two-crust Pie
1 jar (28 ounces) prepared mincemeat (3 cups)
1 ½ cups diced pared tart apples

Directions:
Directions:
Heat oven to 425 degrees. Prepare pastry. Mix mincemeat and apples. Turn into pastry-lined pie pan. Cover with top crust, which has slits cut into it; seal and flute edges. Cover edge with 2- to 3-inch strip of aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking.

Bake 60 to 65 minutes. Serve warm. Add Cool Whip or Whipped Cream.

I am not sure if anyone but my Dad, Papa Pete, ever ate this pie, but Grandma would make it for him every Christmas. I tasted it once and it was a little too rich for me as a child, but I have had mincemeat cookies as an adult and I like the taste. I remember when the pie came out of the oven. The scent of it baking will always remain a Christmas memory for me. I remember how excited my Dad was for this special pie, and how his brothers-in-law would always tease Grandma and say that he was her favorite.
