1 ½ very ripe bananas
Lemon Juice
1 egg
½ cup sugar
¼ cup oleo or melted shortening
½ cup chopped pecans
1 cup flour
½ tspn. baking soda
Dash of salt

Directions:
Directions:
Mash bananas and squeeze lemon juice over them. Beat in eggs and sugar; add shortening and nuts. Stir in flour, soda and salt. Bake in a small well-greased and lightly floured loaf pan. Bake at 350 degrees for 40-45 minutes.

Note: Recipe can be doubled to make larger loaf. Also good made into muffins.

Bananas provide such a great source of potassium. I hate to throw away bananas and this is such a great way to use them in a delicious recipe that will warm the hearts of your family. I used to make this more frequently, when my family was still at home. It's still one of my favorite breads!
