(Puppa qu Lova – or Doll with Egg)

Preheat oven to 375 degrees

16 Tblspns. sugar
16 Tblspns. melted butter
1 tspn. Vanilla
8 tspns. baking powder (level)
1 dozen hard-boiled eggs (colored)
6 ½ cups sifted flour

Directions:
Directions:
Pour melted butter into sugar and mix. Add vanilla. Beat eggs well and add to mixture. Add baking powder. Keep adding flour, I cup at a time, on floured board to mixture and knead until smooth. Let rest 1 hour. Cut off small pieces. Roll ends and leave thick in the center.

Shape into baskets or dolls by attaching both ends. Ends could also be twisted. Cut slightly into diameter of thicker portion in 2 or 3 places and spread apart. Place colored eggs into thicker portion of basket and press down slightly. Cut 2 small strips of dough. Roll into strings long enough to be placed cris-cross over the egg. Attach to basket.

Bake until golden brown, brushing the surface with frothy egg whites.

Grease pans and flour lightly.

Bake until done.

This is the most creative food item I have ever prepared. These are made the day before Easter and eaten for breakfast on Easter morning. It is another one of those recipes that no one ever officially wrote down. I had to learn by watching my Aunt Mary and mother.

Grandma made them, my Mom and Aunts made them, and I make them. I hope my sons remember how we would color eggs and set them in the cookies. I sometimes give a few away to special friends. These are great for dunking into a cup of coffee. The egg provides the protein. It is quite a filling breakfast. The egg represents new life and at Easter we are given new life through the resurrection of Jesus from the dead. A lot of Italian dishes have religious significance. St. Joseph's Day foods are a great example.
