4 Large Cans Hunts Tomato Sauce
3 Large Cans Water
5 Cloves of Garlic
Olive Oil
Pepper, Basil, Bay Leaves to Taste
4-5 Tblspns. Sugar

Ricotta Cheese Filling:

15 oz Ricotta cheese
1 Egg
2 Handsful of Grated Parmesan cheese
Pepper and parsley to taste

Crush or slice garlic and sauté with enough Olive Oil to coat bottom of very large pot. Add tomato sauce and water, pepper, basil and bay leaves. When the sauce comes to a boil, add sugar.

Reduce heat and simmer for about 1 to 1 ½ hours. Leave cover on with wooden spoon holding cover open at least for ½ the time.

Ricotta Cheese Filling:

In a mixing bowl, combine Ricotta Cheese with beaten egg, add grated cheese, 1 tspn. Parsley flakes and pepper (I never use salt, and I really don’t think my sauce recipes need it since Hunt’s has salt in its sauce.) We used to pour about ¼ cup of sauce into the ricotta to make it spread farther. However, the beaten egg should do it, too.

Assembling and Cooking the Lasagna:
Prepared tomato sauce. Cook lasagna noodles for no more than 7 minutes, add a little oil to water.
Drain, reserving a little of the water. Add cold water to allow noodles to cool down. Spread wax paper on counter, then pull out noodles one at a time. Lay them flat and pat them with a paper towel.

Ricotta Mix:
Parmesan Cheese
Slices or Grated Mozzarella Cheese
Optional – Cooked Ground Beef or slices of cooked Italian sausage. Cover the bottom of a rectangular pan with Tomato Sauce. Add layer of cooked noodles (using the broken ones for the bottom layers). Add ricotta mix and spread evenly over noodles. Sprinkle with mozzarella cheese and Parmesan cheese, then cover with tomato sauce. Continue layering noodles, cheese and sauce ending with a layer of noodles covered with mozzarella and Parmesan cheese and sauce.

Bake in 350 degree oven for 30 minutes. If using a glass baking dish, bake at 325 degrees.


Variations:

Cook Italian sausage and slice. Layer in lasagna with cheese.

Chopped spinach drained well. Layer with cheese.

This is one of the most popular Italian dishes. It is pretty rich, so once you eat it, you really don't want a whole lot of leftovers. Invite the neighbors or send portions home with your company.

My family loves this dish. To make a similar dish with less work, used Penne or Mostaccioli Rigatti and add ricotta, sprinkle with Parmesan and mozzarella cheeses and bake at 350 for about 25 to 30 minutes.
