"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Pour Olive Oil in a large pot to coat bottom of pot and heat, but do not burn. Slice peeled garlic cloves (or place cloves under a wide knife and pound with your fist!). Add garlic to oil. Personal Notes:
Our sauce has been in transition over the years. In my earlier years, I used to buy cans of whole tomatoes and cans of tomato paste. This would take several hours to cook. Then Hunts came out with canned sauce. It isn't flavored, but it is already mixed with tomato paste and tomatoes. It is so much easier and quicker. I used to make this with chopped onions in the sauce as well as the garlic, but Eric cannot stand onions and the only way he will eat it is without them. The onions make the sauce somewhat sweeter. What can I say about homemade tomato sauce? It is a family staple. Everyone loves a dish of pasta from time to time.
