“Here’s one I learned from Alma and Walter Rajotte! It is a great winter dish.”


1 onion (medium)
2 Tblspn. butter
1 lb. chopped beef
1 small can mushrooms
1 large can cream corn
1 small can peas or any other vegetable
4 boiled potatoes (medium) – mashed with butter

Directions:
Directions:
Brown onion in butter. Add mushrooms and meat and brown. Add salt and pepper. Drain meat. Top with corn and (other veggie - optional).

Mash potatoes with butter, milk, salt and pepper. Spread potatoes over corn. Brown in 350 degree oven.

I never had this meal before I met my husband's family. It was popular around their house. Alma taught me this and several other family recipes. I found out later that it was a common dish among all nationalities, because it is called the "poor man's dish" and people would put into it whatever they happened to have leftover. It is hearty and filling.
