1 cup sugar
1/2 cup salad oil
2 eggs, beaten
1 tsp. vanilla
1 cup coarsely-grated carrots
1 1/2 cup sifted all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup chopped nuts (optional)

Directions:
Directions:
Heat oven to 350º. Grease a loaf pan 9x5x3". Combine sugar, oil, eggs and vanilla in mixing bowl and stir to blend well. Stir in carrots. Sift dry ingredients together into mixture and stir to blend. Stir in nuts. Spoon into prepared pan. Bake about 50 minutes or until a tooth-pick stuck in the centre comes out clean.
